Dutch Oven Chili Dogs with Griddled Onions

INGREDIENTS:

Open Grates

  • Hot dogs
  • Buns (briefly toasted)

Cast Iron Griddle

  • Sliced onions
  • Optional jalapeños

Dutch Oven

  • Quick chili sauce

Ingredients

  • 8 hot dogs
  • 8 buns
  • 1 large yellow onion, thinly sliced
  • 1 jalapeño, sliced (optional)
  • 1 tablespoon oil
  • 1 can chili with beans or no-bean chili
  • 1/2 cup crushed tomatoes or tomato sauce
  • 1 teaspoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar
  • Salt and black pepper

INSTRUCTIONS:

  1. Light the grill and set it up with the griddle on one side, open grate on the other, and the Dutch oven hanging above the center as shown in the uploaded images.
  2. Add the canned chili, crushed tomatoes, mustard, Worcestershire, and garlic powder to the Dutch oven. Stir and let it warm slowly until thickened, about 15–20 minutes.
  3. On the griddle, add oil and cook the sliced onions with a pinch of salt until soft and lightly browned. Add jalapeños during the last few minutes if using.
  4. Grill the hot dogs over the open grates until browned and lightly blistered, turning as needed.
  5. Toast the buns cut-side down on the open grates for 30–60 seconds.
  6. Build each dog with a hot dog, a spoonful of Dutch oven chili, griddled onions, jalapeños if using, and shredded cheddar.
  7. Serve right away while the chili is hot and the buns are still lightly crisp.
