Griddled Pork Chops with Charred Scallions

INGREDIENTS:

Open grates

  • 4 bone-in pork chops, about 1 inch thick
  • 2 bunches scallions
  • 1 lemon, halved

Cast iron griddle

  • 2 apples, sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Seasoning / finish

  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons whole grain mustard
  • 1 tablespoon honey

INSTRUCTIONS:

  1. Preheat the grill so the open grates are medium-high and the cast iron griddle is hot but not smoking.
  2. Pat the pork chops dry. Season both sides with salt, pepper, garlic powder, and smoked paprika.
  3. In a small bowl, mix the mustard and honey.
  4. Add butter and olive oil to the cast iron griddle. Lay down the apple slices and cook for 2 to 3 minutes per side until softened and browned.
  5. Place the scallions on the open grates and cook for about 1 to 2 minutes per side until lightly charred.
  6. Put the pork chops on the open grates. Grill for about 4 to 5 minutes per side, depending on thickness, until nicely marked and cooked through.
  7. In the last minute, brush the pork chops lightly with the honey mustard mixture.
  8. Grill the lemon halves cut-side down for 1 to 2 minutes.
  9. Serve the pork chops with the warm apples and charred scallions on top or alongside. Squeeze grilled lemon over everything.
