Griddled Pork Chops with Charred Scallions

INGREDIENTS:
Open grates
- 4 bone-in pork chops, about 1 inch thick
- 2 bunches scallions
- 1 lemon, halved
Cast iron griddle
- 2 apples, sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
Seasoning / finish
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 tablespoons whole grain mustard
- 1 tablespoon honey
INSTRUCTIONS:
- Preheat the grill so the open grates are medium-high and the cast iron griddle is hot but not smoking.
- Pat the pork chops dry. Season both sides with salt, pepper, garlic powder, and smoked paprika.
- In a small bowl, mix the mustard and honey.
- Add butter and olive oil to the cast iron griddle. Lay down the apple slices and cook for 2 to 3 minutes per side until softened and browned.
- Place the scallions on the open grates and cook for about 1 to 2 minutes per side until lightly charred.
- Put the pork chops on the open grates. Grill for about 4 to 5 minutes per side, depending on thickness, until nicely marked and cooked through.
- In the last minute, brush the pork chops lightly with the honey mustard mixture.
- Grill the lemon halves cut-side down for 1 to 2 minutes.
- Serve the pork chops with the warm apples and charred scallions on top or alongside. Squeeze grilled lemon over everything.
