Grilled Pineapple and Pound Cake with Brown Sugar Butter

INGREDIENTS:
Open grates
- 1 small pineapple, cut into rings or long spears
- 8 slices pound cake
Cast iron griddle
- 4 tbsp butter
- 3 tbsp brown sugar
- 1 pinch cinnamon
- 1/2 cup chopped pecans
For serving
- Vanilla ice cream or whipped cream
- Honey, optional
INSTRUCTIONS:
- Preheat the grill so the open grates are medium-high and the cast iron griddle is medium.
- On the griddle, melt the butter. Stir in the brown sugar and cinnamon, then add the pecans. Cook for 2 to 3 minutes until glossy and lightly toasted. Move to a cooler edge if needed.
- Place the pineapple on the open grates and grill for 2 to 3 minutes per side until lightly charred.
- Grill the pound cake on the open grates for about 30 to 60 seconds per side, just until toasted with clear grill marks.
- Plate the toasted pound cake, top with grilled pineapple, then spoon over the brown sugar pecan butter from the griddle.
- Add vanilla ice cream or whipped cream. Finish with a light drizzle of honey if you want it sweeter.
